We take a lot of care to ensure that our yacht is stocked with the freshest, finest ingredients, and we make sure, too, that the team preparing your meals is one of the best. And so we’d like to introduce you to Dunia Baru’s new chef, Tom Brett, who has stepped onboard after working in Japan. Tom is passionate about working with fresh fish, which we have in abundance in Indonesia, and his talent and skill in the kitchen is superb. The first dinner he prepared on Dunia Baru – pictured here – was butter soie scallops; beef tataki served with edamame puree and pickled onion; and shrimp and squid with soba noodles and ponzu sauce.
